Raspberry Cream Popsicles

Raspberries are one of those fruits that taste like summer in the most concentrated way possible — bright, tart, and sweet all at once. These popsicles let that flavour shine without any cooking, any fuss, or any special equipment beyond a blender and a mold.

The heavy cream keeps them rich and smooth instead of icy, and straining out the seeds gives you a silky texture that feels genuinely indulgent. The kids love them. So do I.

Ingredients

  • 12 oz fresh or frozen raspberries about 2½–3 cups
  • ½ cup sugar or honey, adjust to taste — start lower if your raspberries are very sweet
  • 1–2 Tbsp fresh lemon juice
  • 1 cup heavy cream * * or full-fat coconut cream for dairy-free
  • ½ cup whole milk or Greek yogurt
  • 1 tsp vanilla extract
  • Pinch of salt, to brighten the flavour

Instructions

  1. Add all ingredients to a blender and blend until completely smooth and creamy.
  2. Pour the mixture through a fine mesh sieve set over a bowl to strain out the seeds. Use a spoon or spatula to press the purée through — take your time here, it's worth it.
  3. Taste the mixture before pouring. It should be slightly sweeter than you want the finished popsicle to be — cold mutes sweetness.
  4. Pour into popsicle molds, insert sticks, and freeze for 24 hours.
  5. Enjoy!

Notes

  • Yields approximately 8–10 popsicles, depending on mold size.
  • Creaminess: Heavy cream plus a little Greek yogurt gives the richest, least icy result.
  • Raspberry intensity: Drop a few whole berries into the molds before pouring for little bursts of fruit throughout.
  • No ice crystals: The fat content and sugar both help here. Avoid low-fat dairy if you want a smooth, creamy texture.
  • Extra fancy: Swirl in a little extra raspberry purée before freezing, or dip the frozen pops in melted dark chocolate and freeze again for a shell.

Quick Variations

  • Raspberry-Lemon Cream: Add extra lemon zest and a little more juice.
  • Raspberry Cheesecake: Blend in 4 oz softened cream cheese along with the dairy.
  • Lighter: Swap half the cream for Greek yogurt or a good coconut yogurt.
