The ultimate grab-and-go snack.

These no-bake energy balls are perfect for busy mornings before catching the ferry, packing school lunches, or satisfying after-school hunger. They're kid-approved, naturally sweetened, and packed with wholesome ingredients — a true win in my books.

Ingredients

  • 1 cup chopped pecans
  • 1 cup golden flax seeds
  • 1 cup chia seeds
  • 3 cups rolled oats
  • 2 cups peanut butter
  • 1 tablespoon vanilla extract
  • 1 cup honey
  • 1 cup dark chocolate chips
  • 2 pinches of coarse salt

Instructions

  1. Combine everything. Add all ingredients to a large mixing bowl.
  2. Mix well. Stir thoroughly until everything is completely combined and the mixture looks wet and sticky.
  3. Portion and roll. Using a small cookie scoop, portion out the mixture. Roll each portion firmly between your hands to form a compact ball, then place on a parchment-lined baking sheet.
  4. Freeze to set. Freeze for 1 hour to set.
  5. Transfer and store. Move the energy balls to freezer-safe containers.

Notes

  • Storage: I prefer keeping them in the freezer so they stay firm and cold. They can also be stored in the refrigerator and will keep well for up to one week.
  • Scaling: This recipe makes a large batch — feel free to halve it if you're just testing it out.
  • Nut-free option: Swap the peanut butter for sunflower seed butter and the pecans for pumpkin seeds for a school-safe version.
