There are recipes you make once and immediately add to the permanent rotation. This is one of them.

Mexican street corn —elote— is one of those foods that hits every note at once: sweet, smoky, creamy, tangy, a little spicy. This salad version takes all of those flavors and turns them into something you can make ahead, serve a crowd, and eat with a spoon straight from the bowl. It works as a side dish alongside grilled chicken or fish, as a dip with tortilla chips, or as a light main when you pile it into warm tortillas.

The secret is getting real char on the corn. Don't rush it, don't stir too much — let it sit in the hot pan until it's deeply golden and a little smoky in places. That's where the flavor lives.

Ingredients

  • 4 cups frozen corn kernels, thawed and patted dry
  • 2–3 Tbsp neutral oil or melted butter for cooking
  • ½ cup mayonnaise
  • ½ cup crumbled feta cheese
  • 1–2 jalapeños or serranos, seeded and finely diced , or ½ bell pepper for crunch without spice adjust to heat preference
  • 1 small red onion, finely chopped
  • 1 cup chopped fresh cilantro
  • 1–2 garlic cloves, minced or grated or 2 tsp garlic powder
  • Juice of 2 limes , plus extra wedges for serving about 3–4 Tbsp
  • 1–1½ tsp chili powder
  • ½ tsp smoked paprika optional but recommended for depth
  • Salt and black pepper, to taste

Instructions

1. Cook the corn

Heat the oil or butter in a large skillet (or on a Blackstone) over medium-high heat. Add the corn kernels in a single layer and cook, stirring only occasionally, until deeply golden and charred in places — about 6–10 minutes. Transfer to a bowl and refrigerate for 30 minutes to cool.

2. Make the dressing

In a large bowl, whisk together the mayonnaise, lime juice, garlic, chili powder, smoked paprika, and a good pinch of salt and pepper. Taste and adjust — it should be bright and a little spicy.

3. Assemble

Add the cooled corn, diced jalapeño (or bell pepper), red onion, cilantro, and feta to the dressing. Toss until everything is evenly coated. Taste again and adjust salt, lime, chili, or mayo as needed. The salad should taste vibrant and balanced — creamy, tangy, salty, and a touch smoky and spicy.

Refrigerate for another 30 minutes to let the flavors meld. It tastes best cold.

4. Serve

Transfer to a serving bowl. Top with a sprinkle of chili powder, extra cilantro, and lime wedges.

Tips for the Best Result

Char is key.Don't skip getting good color on the corn — that's where the smoky depth comes from. Resist the urge to stir constantly.

Make it ahead.Dress just before serving if you want maximum crunch, or mix everything and refrigerate up to a day ahead. The flavors actually improve overnight.

Variations to try:

  • Stir in diced avocado right before serving
  • Add grilled shrimp or chicken to turn it into a full meal
  • Mix in a handful of black beans for extra heartiness
  • Swap feta for cotija if you can find it
